Zucchini Cupcakes

I have combined a few of my favourite recipes to come up with these super tasty and healthy cupcakes for kids. You can also add nutmeg or pumpkin pie spice.

Preparation time: 15min
Cooking time: 20min
Makes 8 cupcakes
Suitable for children under 1
Can be frozen

Ingredients
1 cup whole wheat flour
1 teaspoon baking powder
7 tablespoons of juice (apple or orange)
zest of one orange (can be omitted)
3 tablespoons of melted butter
1 egg
1/4 cup of brown sugar or honey (no honey if under 1), this can be omitted but I find the kids are more likely to eat it with the extra sweetness.
1 small zucchini grated (can be substituted for any vegetable)
1/3 cup of raisins (chopped for younger ones)


Preheat oven to 350 degrees Fahrenheit and line muffin pans with paper cases.
In a large bowl, mix flour and baking powder. Set aside.
Whisk the juice, zest, butter, egg and sugar or honey until well combined, then stir slowly into the flour mixture, followed by the zucchini and raisins. Bake for 17-20 minutes, until firm to the touch. Let cool on a wire rack. Store in an airtight container in the refrigerator for up to 3 days.

If older kids insist on frosting then try and unsweetened, whipped cream with chopped strawberries.

Hospital visits in Japanese

This website is a must if you do not speak Japanese and you need to visit a non-English speaking hospital or doctor. It is a series of multilingual medical questionnaires for foreigners living in Japan.

Find your language (English is the orange one second from the top left), and then simply select your category corresponding to the hospital department you are visiting. You can print it and bring it along your appointment and both you and the doctor will understand because it is bilingual!

Shopping for Baby Online

 These are three of my favourite English, online shops in Japan.

1. Kenko.com  Japan's no.1 e-drugstore is now available in English, yay! Lots of baby goods and supplements.
2. Items can be purchased from Akachanhonpo online at Rakuten. The descriptions have been translated using an auto-translator so they can be quite confusing. Also available in Korean and Chinese. For all Rakuten products in English click here.
3. Sammy's is a new and used clothing store for kids of all ages, from newborn to 12 years old.

To beef or not to beef?

Cows throughout Japan have been fed rice straw from the Fukushima area with concentrations of radioactive nuclides. The rice straw in question was left out in the open after authorities had warned farmers to keep harvested feed indoors to prevent contamination from the fallout. The meat from these cows is measuring Cesium-134 and Cesuim-137 at levels higher than the allowed amount for human consumption. Unfortunately this was not picked up until after the meat had already been distributed to consumers.

My family ate some beef, should I be concerned?
- An adult eating 1kg of beef at the maximum allowed level of Radioactive Cesium is equivalent to approximately 1/50th of the annual natural occurring dose or 1/13 of the radiation received on a one way flight from Tokyo to New York. The highest level of Radioactive Cesium measured to date was just under 7 times the maximum allowed level in Japan (about 3.5 times the allowed amount in the USA).

Are other meats contaminated?
- Pigs and chickens are not fed straw and to date have not measured Radioactive Cesium above the maximum allowed amount.

Should I stop eating beef?
-  Radioactive Cesium has a half life of 60 days which means that this a short term problem.

Radiation Levels in Food

If you are like me and are concerned about the radiation in food then you should look at this site. It is the Ministry of Health, Labour and Welfare's site and you can stay up to date on every food item that is being tested and all of the current food restrictions. Scroll down the bottom under "Reported on:", it shows all of the different foods that are being tested each day and the radiation levels. This site made me far more comfortable with purchasing local foods from Japanese supermarkets. Items that are measuring some radiation like blueberries I have decided to avoid locally grown and other items like eggs and milk which are measuring none or almost no radiation I am happy to purchase from anywhere.
